Browsing a few of the recipes and wondering what i was going to try for this weeks meal i came across this Buffalo Ranch Chicken Casserole. As you may know i am a visual person and when i see a picture of food that looks good i just have to give it a go. So i went to my local grocery store and purchased a few items then returned home to try this recipe out. I am a pretty fussy eater so it takes alot to please my taste buds. I wasnt disappointed with this meal, not only was it pretty quick to prepare it was another fairly straightforward recipe. Here it is:
Buffalo Ranch Chicken Casserole Ingredients
1 1/2 to 2 pounds of fresh chicken breast, cut into small bite-size pieces
1 - 24 oz. bag of Potatoes
1/4 cup of hot sauce
1 cup of fresh ranch dressing
1 cup of Mexican cheese
6 thinly sliced green onions
Buffalo Ranch Chicken Casserole Directions
Pre-heat the stove to 350 degrees.
Mix together the hot sauce along with the ranch dressing within a smallish dish.
Put chicken pieces into a 12 x 9 casserole dish.
Cover the chicken breasts with about one half of the buffalo ranch sauce.
Distribute the majority of the green onions on the chicken breasts. Save a few of the onion pieces for the topping.
Put the potatoes in lines over the chicken breast pieces.
Pour the remainder of the buffalo ranch sauce onto the potatoes.
Spread the Mexican cheese on top of the potatoes.
Top using the left over green onions.
Cook for about 45 minutes at 350 degrees.
