Cool Greek Yogurt Chicken Salad
Another easy yet cooling chicken salad to try.

Cool Greek Yogurt Chicken Salad Ingredients
2 organic Chicken Breasts
3 tbsp of fresh Plain Greek Yogurt
1 cup of halved red grapes
1 fresh finely chopped celery stalk
1 pinch Celtic Sea Salt
1 pinch of ground pepper
4 cups of baby spinach and romaine
2 tbsp of Candied Pecans
Cool Greek Yogurt Chicken Salad Directions
Begin by bringing a pot of cold salted water to the boil. Add in the chicken breasts and then poach until they are cooked right through, usually 15 minutes. Remove the chicken breasts from the water and then allow to rest on the chopping board for 5-10 minutes. Then give the chicken breasts a very rough chop, then put in a dish and place it within the refrigerator for a couple of minutes to cool down.
Take the dish out from the refrigerator, and then add the greek yogurt, the grapes, the celery along with a touch of pepper and salt. Mix to combine.
Equally organize the baby spinach and romaine greens amongst two plates. Top with the chicken salad mixture and then garnish with the candied pecans.
Serve right away!
