For all you chicken, cheese and casserole lovers here is a recipe that is cheesy, creamy, chickeny (if thats a word) and a casserole. What a mouthful! And thats what you will be doing with this recipe - eating it by the mouthful because it is a really nice dish. Here is how you prepare and make it:
4-5 large potatoes
1 10.75-ounce can of cheddar cheese soup, condensed
1 1/4 cups of whole milk
8-10 slices fresh bacon
8 fresh Boneless Chicken Breasts
4 oz of shredded cheese, (around 1 cup)
Sea salt & black pepper
Mix together the condensed cheese soup along with the whole milk and then stir until very smooth. Set aside 1 cup of cheese soup mixture to make use of later on.
Clean and peel the potatoes and then cut them into thin slices. Spray the base as well as sides of a 13 x 9 baking dish using some cooking spray. Place 1/4 of the cheese soup blend in to the bottom of your dish. Put in a single layer of the potato slices. Season the potatoes with some pepper and salt. Place a further 1/4 of the soup mixture about the potatoes. Continue doing this process a couple of more times giving you 3 layers of potatoes smothered with the soup mixture. Make sure you pepper and salt each and every layer of potatoes. Cover the dish securely using aluminum foil and then bake at 350 degrees for about 30 minutes.
In the mean time, slice the bacon in to 1/2 inch pieces and then cook within a skillet using a medium to high heat till bacon is browned and crunchy. Take out bacon pieces from the skillet using a slotted spoon and then set aside.
Season the chicken breasts with pepper and salt and then sauté in the bacon drippings over a medium to high heat till browned and then set aside.
Remove the dish from within the oven and uncover. Place chicken breasts on top of the potatoes and then pour the reserved cheese soup all over the chicken. Cover over tightly again with the foil and then continue cooking for another 30 minutes.
Remove the dish from the oven( i prefer using the Breville Smart Oven ) and carefully uncover. Distribute the shredded cheese over the chicken and the potatoes and then top with some bacon pieces. Return the dish to the oven and continue cooking, making sure the dish is uncovered, for about 5 to 10 minutes or until the cheese is melted.
