Healthy Tasty Chinese Chicken Salad Ingredients
2 Boneless Chicken Breasts , boneless and skinless
2 tbsp of soy sauce
1 tsp of sesame oil
1/4 tsp of ground white pepper
4 cups of romaine lettuce, chopped
1 cup of red cabbage, shredded
1/3 cup of grated raw CARROTS
1/4 cup of shelled Edamame
1 red or green onion, sliced thinly
1/4 cup of chow mein noodles
1/4 cup of fresh sliced Almonds
For the Healthy Tasty Chinese Chicken Salad sesame vinaigrette
1/4 cup + 2 tbsp of Rice Vinegar
1 clove of pressed garlic
1 tbsp of sesame oil
1 tbsp of raw sugar
1 tsp of grated ginger
1 tsp of soy sauce
Healthy Tasty Chinese Chicken Salad Instructions
Pre-heat the stove to 350 degrees F.
To create the vinaigrette, stir together the rice wine vinegar, the garlic, the sesame oil, the raw sugar, the ginger and the soy sauce using a medium sized mixing bowl and the put aside.
Using a gallon sized Ziploc Bag or a large dish, mix the chicken, the soy sauce, the sesame oil along with the white pepper; marinate for around Half an hour, rotating the ziploc bag from time to time.
Include the chicken and the marinade to a cooking dish. Put into the oven and then bake until the chicken is cooked through and the juices run clear, around 13 - 15 minutes. Allow it to cool prior to slicing into bite size portions.
To put together the salad, place the romaine lettuce into a big dish; top with the red cabbage, the carrots, the edamame, the green onion and the chicken. Pour the sesame vinaigrette onto the top of the salad and then very gently toss to mix.
Serve right away, capped with cooked chow mein noodles and the almonds.
